    What is Cheesecake?

    A cheesecake is a type of dessert that has a filling made with soft fresh cheese (usually cream cheese), and crust or base made from cookie crumbs, pastry, or cake.  It is frequently topped with a sweet sauce flavored with fruit and/or a chocolate or caramel drizzle.  It can also be topped with fresh fruit, nuts, or whipped cream.

    Cheesecake can be categorized into two broad types of recipes- those that are baked and those that are not.  There are a variety of styles and flavors for each type.

    Pumpkin cheesecake is a family favorite that encompasses the full range of fall flavors with pumpkin pie spices including cinnamon, nutmeg, cloves, allspice, and ground ginger.  Thanks to canned pumpkin or homemade pumpkin puree that has been stored, you can enjoy this dessert at any time of the year!

    Pumpkin cheesecake is complimented by a host of different types of crust.  The two most common crusts used with pumpkin cheesecake are gingersnap and graham, although others including chocolate cookie, shortbread, and crumb crusts mixed with nuts are also used occasionally. 

    There are many flavors that perfectly compliment pumpkin cheesecake and can create new flavor combinations.  Maple syrup lends a warm fall flavor to pumpkin cheesecake while semi-sweet chocolate chips can give a rich and sweet twist to the dish.  Toasted coconut adds new texture and sweetness.  Chopped pecans, almonds or other nuts add a robust nutty flavor to any pumpkin cheesecake creation.  Some of the most common flavors added to pumpkin cheesecake are caramel (store bought works wonderfully or make your own!) and vanilla extract.

    Chocolate can be a special addition to pumpkin cheesecake.  All varieties of white, chocolate, and semi-sweet or dark chocolate can be used in various pumpkin cheesecake recipes.  Stirred into a cheesecake filling they provide tiny bursts of chocolate sweetness to the dessert.  Chocolate sauce or fudge topping can be drizzled over a fresh slice of pumpkin cheesecake for an extra special finish.  Chocolate can be melted and spread or swirled over the top of pumpkin cheesecakes as well.
